Fish Tacos from Skinny Taste


Last night, Derek and I made one of our new favorite summer dishes, Cilantro Lime Fish Tacos.  I ran across this recipe on Pintrest and we've been in love with it since the first taste! Gina Homolka at Skinny Taste has combined fresh ingredients to make these amazing tacos that have only 319 calories per serving!

Served on white corn tortillas and topped with avocado, these tacos are not only delicious but a breeze to prepare! A perfect combination as far as I'm concerned!


Start by dicing all the vegetables.  Onion, tomato, jalapeño, cilantro, and garlic.



I'm pretty much sold on any recipe that includes cilantro.  I just LOVE the way it smells and the fresh flavor it adds to a dish. Just look at that green goodness!!!


Lay out your white fish (I use tilapia) and pat dry. Salt and pepper both sides to taste.


Once you have all the ingredients prepped, you can get cooking! Heat your oil in a skillet and sauté the onions until they are just turning translucent.  


Add the garlic and give it a quick stir.  Lay the fish directly on the onions and cook until it begins to flake.


Once the fish begins to flake, break it up with a spoon and add all the fresh ingredients.


Give it all a quick stir and reduce the heat. Squeeze lime juice all over and allow the mixture to simmer.  


While it simmers, you can heat up your tortillas! We use Guerrero white corn tortillas which can be found in just about any grocery store. We like to heat the tortillas on a skillet with just a little butter.


I should add here that no taco meal would be complete without rice and beans.  My husband grew up in Costa Rica and is a genius when it comes to flavoring these sides. Look at these delicious beans he whipped up!


To regular black beans he adds jalapeño, cilantro, and onion as well as some cumin.  They are amazing, and I'm not even a big fan of black beans!

Once the tortillas are heated, you are ready to dish up your tacos!  Spoon the filling into a tortilla and top with a few slices of creamy avocado. You can then add any traditional taco toppings you like. We choose to stick with sour cream and a bit of hot sauce!  Garnish with cilantro and lime.



Cilantro Lime Fish Tacos

Serves 4

Ingredients:
1 lb white fish (I recommend tilapia)
1 tsp olive oil
1 small onion, chopped
3 garlic cloves, minced
jalapeño peppers, chopped (remove the seeds for less heat)
2 cups diced tomatoes
1/4 cup fresh cilantro, chopped
3 tbsp lime juice
8 5-inch white corn tortillas
1 medium avocado, sliced
lime wedges and cilantro for garnish

Directions:
1. Heat olive oil in a skillet. Sauté onion until translucent, then add garlic.  
2. Place tilapia on the onions and cook until the flesh starts to flake.
3. Add jalapeno, tomato, cilantro and lime juice. Sauté over medium heat.
4. Meanwhile, heat tortillas on a skillet for a few minutes on each side until warm.

Serve a little over 1/4 cup of fish on each warmed tortilla with a slice of avocado and enjoy!
